The equipment and methods used to monitor the electrical and thermal energy consumed in various unit operations in a spinach processing plant are described and the results of a processing plant energy audit are presented. It is concluded that it requires 6.5 MJ of natural gas and fuel oil and 0.072 MJ of electric power to process one kg of new spinach; the energy intensive operations in spinach processing are associated with exhaust boxes, blanchers, and retorts; uniform product flow through the canning line is essential to energy conservation; and design improvements are needed for the blancher, exhaust box, and retort.
