Growth and active biomass production of Lactobacillus casei

Two strains of L. casei, used in hard ripening cheese production, were investigated. The response of both organisms to the cultivation conditions revealed distinct differences between them; namely, morphological changes and activity of cells was dependent on the rate of growth in batch culture, and on residence time in single-stage continuous flow culture as well. The steady state was attained in different media, for strain O and K, the dilution rate being equal to 0.13 hr/sup -1/ and 0.41 hr/sup -1/, respectively. This assured a high concentration of cells and the highest endocellular proteolytic activity. These results are in agreement with our previous findings for S. lactics and diacetilactis showing that the residence time is responsible for autoselection of more active cells and for their acidifying and proteolytic activity. Moreover the maximal increase of biomass has not been coincident with high proteolytic activity. This indicates that the physiological maturity of cells ought to be considered.
