Nutritional influences on metal toxicity: cadmium as a model toxic element

Adequate dietary nutrition is recognized as a significant factor in modifying the response of humans and animals to toxic element exposure. Nutrient deficiencies can exacerbate the effects of cadmium, and supplements of essential nutrients have been shown to ameliorate cadmium toxicity. The effects of exposure to a toxic element, such as cadmium, may vary depending on interactions with other elements that are present in the diet in different concentrations. Cases of cadmium toxicity in humans are reviewed. Discussed are studies on: the effects of dietary nutrients in increasing risks from cadmium; effects of dietary nutrients in decreasing risks from cadmium; effects of age on cadmium uptake; enteropathy caused by dietary cadmium; and nutritional intervention to protect against excess metal intake in humans.
