The manner in which radionuclides find their way into foods and the extent to which the process occurs are reviewed. Qualitative and quantitative selection processes to which radionuclides are subjected significantly alter the concentration in which they enter the food chain; many will not succeed in passing the food chain at all. In view of effective half-life strontium-90, cesium-137, and iodine-131 are by far the most dangerous of the fission products. Factors that govern the extent to which radionuclides will actually appear on the table are identified as: physical and chemical properties of the radionuclides, environmental factors, biological factors, and factors connected with stock- piling, industrial processing, and domestic preparation. Aspects of direct and indirect contumination are discussed, and cases of naturally-occurring high activity food sources are presented. The role of Euratom in the fields of health physics and radiation safety is identified. (H.M.G.)
