Contamination of food and water represents the primary pathway by means of which the human population is exposed to radiation from world-wide or local fallout. Pathways of radioisotopes in the food chain are reviewed, with emphasis on Sr /sup 89/, Sr/sup 90/, Cs/sup 137/, and I/sup 131/. The role of milk in the transfer of fallout radioactivity to man is considered. Countermeasures against fallout contamination are discussed. It is pointed out that actions and procedures that would result in reducing or eliminating the exposure of the population to the hazards of radioactive materials should be directed to the source of the contamination, to the mechanism that transmits it, or to the substance in which it gains access. Available measures and current research are reviewed on measures to reduce the radioactive contumination of soils, plants, milk, and other food items. (C.H.)
