FOOD PRESERVATION BY IONIZING RADIATION

The possibilities of food preservation by ionizing radiation are discussed from the standpoint of effectiveness and cost. The present status of this method of food preservation is described with respect to meats, poultry, seafood, vegetables, fruits, inhibition of sprouting, grain disinfestation, and milk. The effects of irradiation on food wholesomeness, nutritive value, toxicity, and activity are discussed. The current research programs in this field are described; most of those in the U. S. are conducted by the military services and the Dept. of Defense. (D.L.C.)
