RADIATION STERILIZATION OF ORANGE JUICE

Effective sterilization of orange juice was achieved by subjecting it to a radiation dose of 8 x 10/sup 5/ rads or to a radiation dose of 4 x 10/sup 5/ rads followed by incubation for 15 min at 50 deg C. Ascorbic acid, thiamine, and riboflavin in the juice are destroyed to a greater extent by irradiation alone than in the combined irradiation-incubation treatment. Irradiation under oxygen or nitrogen atmosphere does not influence the survival of spoilage organisms. The color change in the juice due to irradiation is minimized under nitrogen atmosphere. (auth)
