The asymptotic behavior of the space-time empirical averages of several classes of Interacting Particle Systems is studied here. The authors prove that the empirical averages obey a process-level Large Deviation Principle whose rate function is given explicitly. In the case of spin systems the authors establish some relevant properties of the rate function, such as the correspondence between its minima and the invariant measures for the process. Finally, for discrete-time non-ergodic systems, the authors give some results on the critical behavior of the empirical averages.
