Journal Article · · Biotechnol. Bioeng.; (United States)

The purpose of this article is to show that yeasts with inulinase activity can be used to produce ethanol from the Jerusalem artichoke (Helianthus tuberosus L.). The results show that a fermentable extract can be easily obtained from the Jerusalem artichoke even under cold conditions.
