Further tests on taste and Aspergillus oryzae propagation with respect to irradiation were made. By means of the Bradly method, the irradiated grains were found to be softer than the unirradiated grains. The pH change and reducing sugars were less for unirradiated boiled rice. No clear relationship between the radiation dosage and the power of enzymes produced by the microbes was established. (OID)
