POLAROGRAPHIC STUDIES ON STORAGE OF MEATS. PART XX. SYNERGISTIC EFFECT OF GAMMA-RAY IRRADIATION BY DOSAGES WITHIN 60 X 10*SUP 4/ ROENTGENS AND 5 C STORAGE ON CHEMICAL CONSTITUENTS AND PROTEIN WAVES OF MEATS (in Japanese)

Journal Article · · Radioisotopes (Tokyo) (Japan)
An experiment on the storage life and changes in chemical components and protein waves of irradiated beeves, porks, and chickens during 5 nif- C storage was presented. Each meat, 25g, was vacuum packed into a polyethylencellophane bag (5.3 x 10/sup -2/ mm thickness). Samples of each were irradiated with the following dosages: 0, 9.5 X 10/sup 4/, 20 X 10/sup 4/, 33 x 10/sup 4/, and 6 x 10/sup 4/ roentgens. Each sample was stored at 5 nif- C for 120 days. Changes in chemical components and protein waves of each sample were estimated. Protein waves were estimated in a buffer (at 25 nif- C) with the following composition: 0.001M CoCl/sub 2/, 0.1M NH/sub 4/Cl, and 0.2M NH/sub 4/OH. (C.E.S.)
