Nutritional hygiene aspects of radiopreservation of food (in Slovak)

The determination of the optianum regimen of irradiation for the preservation of vitamin E in possible use of ionizing radiation for pasteurization and sterilization is very important from the point of view of hygiene. Various experimental examinations confirmed the destructive effect of ionizing radiation ( gamma rays) on vitamin E. The radioresistance of vitamin E is dependent on the concentration of the preparation in a solution. Increasing the dose of ionizing radiation was found to resuit in an increasing percentage of destruction; the input of the source of radiation also proved to be important. The study into the effect of storage time on the content of vitamin E in irradiated samples revealed that radiolytic processes were going on not only during the actual irradiation but a long time after the irradiation.
