Formation of nitrosamines from tertiary amines and nitrous acid

It is concluded that tertiary amines react quite readily with nitrous acid at moderately acid ph (3-6) to form nitrosamines, that such reactions take place significantly at body temperature, and that the large aliphatic tertiary amines give higher yields than do the short chain compounds. A continuation of the authors' earlier studies with drugs (Lijinsky, et al., Nature, 239: 165-7 (1972)) illustrates the possible significance of some of the reactions in man, when food-containing nitrite is eaten. However, the large variation in the amount of nitrosamine formed from the compounds of different chemical structure demonstrates the difficulty of estimating the magnitude of the hazard presented by any one compound.
