Study into the identification of irradiation ground paprika

From international colloquium: the identification of irradiated foodstuffs; Karlsruhe, Germany (24 Oct 1973). Several methods for the demonstration of irradiation in ground paprika were tested. In carbonyl compounds extracted by steam distillation unambiguous changes, which might have served as a basis for detecting irradiation, were not observed. Derivatography did not prove suitable either. On the basis of the size of ESR signal, the control sample and the irradiated one could be distinguished 2 to 3 weeks after irradiation. After a longer storage period, the size of the signal is irrelevant. Further study of the shape of the ESR signals may yield valuable information in experiments on the demonstration of irradiation.
