INVERSION OF SUCROSE IN H$sub 2$O AND D$sub 2$O (in French)

The effects of heavy water on the inversion of sucrose were investigated. The measurements were made at a temperature of 18 deg C using the Hg 5461 ray, and 99% heavy water. The reaction constant K was obtained for the inversion using HCl and the invertase B.D.H. as catalysts. For the invertase the ratio K/ sub H/sub 2/O/K/sub D/sub 2/O/ is R = 1.54. With an HCl catalyst R = 0.65. No inversion was obtained using ultraviolet light as catalyst. The results show that the presence of D/sub 2/O produces an acceleration of the inversion reaction. Ultraviolet radiation with the presence of HCl, also causes a more rapid inversion. (J.S.R.)
