Insect infestation can be eliminated in spice products by ionizing radiations. In practically every case, the irradiated spices examined showed no evidence of live insects after three months incubation; this was at levels of 50,000 and 75,000 rep. When irradiated with 3 x 10/sup 6/ rep, no significant change in the character of the spice itself occurred, as measured by triangle comparisons using a panel of about 20 members. None of the spices investigated, when combined in frankfurters and pork sausage and irradiated at 0.75 to 3.0 x 10/ sup 6/ rep, showed any tendency to significantly mask or prevent ionized flavor and odor. In general, irradiation appears to reduce the odor and flavor of spices in pork sausage. (auth)
