FLEXIBLE FOOD PLANS FOR DISASTER SITUATIONS

Planning for food service in hospitals in event of a thermonuclear attack or other civil catastrophe is discussed. Disasters of three different scopes or magnitude are considered: disaster small in scale relative to the size of the hospital; a nuclear fallout period when the hospital would be used as a shelter; and an emergency that would fill the hospital to its greatest capacity. It is pointed out that nutrient requiremerts may be less important than psychological requirements of shelter occupants. Plans for food utilization are outlined and possible menus are offered for various emergency conditions. (BBB)
