Abstract

Within the research project on the monitoring of foods involving 11 Laender of the Federal Republic of Germany (German Food Contamination Monitoring Programme), selected food items were examined for a number of residues and contaminants by the laboratories of official food control in collaboration with the Centre for Surveillance and Health Evaluation of Environmental Chemicals of the Federal Health Office (ZEBS). In order to guarantee the comparability of analytical results among the 17 laboratories which have participated in the project until March 1990, particular efforts were taken to ensure the quality of analytical data and to harmonize the steps of sampling, sample preparation and recording of data. Samples of beef and pork including several organs, milk, potatoes, lettuce, white cabbage, strawberries and apples were taken according to strictly statistical aspects. Particular attention was paid to the possible seasonal influence on the contamination levels of the products. In the present report, an overview is given of the results obtained up to now for nitrate in foods of vegetal origin and for polychlorinated biphenyls in all food items included in the initial phase of the study. [Deutsch] Im Forschungsvorhaben `Bundesweites (Lebensmittel-) Monitoring` werden seit Oktober 1988 von Laboratorien der amtlichen Lebensmittelueberwachung aller elf Bundeslaender zusammen mit der Zentralen Erfassungs- und Bewertungsstelle fuer Umweltchemikalien (ZEBS) des Bundesgesundheitsamtes eine Auswahl verschiedener Lebensmittel auf eine Vielzahl von Rueckstaenden und Kontaminanten geprueft. Um die Vergleichbarkeit der Analyseergebnisse der 17 bis Maerz 1990 beteiligten Untersuchungsaemter zu sichern, wurden besondere Anstrengungen im Bereich der analytischen Datenqualitaetssicherung und bei der Harmonisierung von Arbeitsschritten unternommen. Die Probenahme der bisher untersuchten Lebensmittel Rind- und Schweinefleisch inklusive der Organe Leber und Niere sowie des Fettgewebes, Milch, Kartoffeln, Kopfsalat, Weisskohl, Erdbeeren und Aepfel erfolgt streng nach statistischen Gesichtspunkten. Besonderes Augenmerk wurde auf moegliche saisonale Einfluesse des Schadstoffgeschehens der Lebensmittel gelegt. Die vorliegende Arbeit gibt einen Ueberblick ueber die bisherigen Ergebnisse der Nitratuntersuchungen bei pflanzlichen Lebensmitteln und die Ergebnisse der Untersuchungen auf Polychlorierte Biphenyle in allen untersuchten Lebensmitteln der Anlaufphase.
