On October 9--10 1990, EPRI sponsored a conference in New Orleans, Louisiana on Electric Dehumidification: State of the Art Humidity Control for Supermarkets. The conference was attended by 124 electric utility, manufacturer, supermarket industry and consultant representatives. Attendees heard 17 speakers address efficient electric technologies for controlling relative humidity, and the importance of humidity control in the supermarket environment. Speakers addressed efficient electric technologies as well as gas desiccant systems. The management of energy use in supermarkets is a complex task. Energy costs are a major part of the supermarket operating budget, and the supermarket business is one where small differences in operating costs can make the difference between profit and loss. Energy use is dominated by refrigeration and HVAC, and the control of energy costs is dependent on the successful management of the interaction between these two systems. Humidity control in supermarkets is critical because of the presence of refrigerated display cases. Excess humidity causes display case fixture sweating and refrigeration coil and product frosting, requires frequent defrosting, and increased energy use for antisweat heaters and refrigeration. The conventional approach to dehumidification in an all-electric system is overcooling to condense moisture and reheat to bring the air to a comfortable temperature. This approach, while effective in less demanding environments, results in high electric energy costs for the humidity control necessary in supermarkets. Speakers in the introductory session of the conference explained the importance of electric energy for the supermarket; discussed modern refrigeration systems; and set the stage for more detailed discussion of specific dehumidification systems.
