Title: DEHYDRATED VEGETABLES

Abstract

A process is given for reducing the rehydration time of dehydrated vegetables by exposing them to gamma or beta radiation. The radiation energy should not be more than 10 Mev, and the dose should be 0.25 x 10/sup 6/ to 11 x 10/sup 6/ rep. Examples are given in which the process is applied to dehydrated carrots, green beans, celery, pepper, onions, cabbage, leek, lima beans, okra, potatoes, lentils, soup mixes, and sweet corn.
