Enzyme function and control during conversion of grain starches to fermentable sugars

The use of dry extruders in cooking grains for fermentation has been investigated. It is possible to consistently achieve better conversion than with standard batch methods. Best performance is achieved at high temperature and low moisture content. The affect of substrate concentration, dextrose equivalence, and agitation on conversion of starch to sugar by enzymes has been investigated. The affect of alcohol and fungicides on conversion is reported. Enzyme kinetics are defined and discussed.
